The mornings can be a busy time for any family, especially if you aren’t always on the same schedule. One of my kids is an early riser and likes to eat right away. Another one will sleep as late as we let her and is always the last to have breakfast.

For that reason, overnight oats are a favorite in this house. I love them for the simple reason that I make them the night before and the kids can help themselves whenever they are ready in the morning.

I also love the high amounts of good fat from the chia and walnuts—I tell my kids, it’s good brain food for school!

SERVING SIZE
  • Makes enough for two.
INGREDIENTS
  • 1 ½ cups oats
  • 2 cups unsweetened almond milk
  • 2 Tbsp Chia Seeds
  • 2 Tbsp Maple Syrup
  • 1 tsp cinnamon
  • 1 cup blueberries (fresh or frozen)
  • 1 cup walnuts (or nut of your choice)
DIRECTIONS
  • Combine all ingredients together in large bowl. Cover with aluminum foil and leave in fridge overnight (or for at least 8 hrs). Enjoy hot or cold!
